The Best Banana Bread Recipe...

Ok it's a big call... 'The Best'... but seriously I've tried ALOT of Banana Bread (especially through those pregnant days!).  This little beauty is moist (not oily), full of favour and if your lucky to have any left the next day, tastes even better. 

I was lucky to get the photo you see above before it was three quarters gone and all but two chocolate melts left (by the way the chocolate is optional, I just put them on top for the kids). It's a pretty no fuss and quick recipe, a great option for an afternoon snack.
3 mashed ripe bananas  1 cup plain flour 1 egg 1/4 cup coconut oil (liquid-state) 1/4 cup sour cream 1/2 cup brown sugar 1/4 cup caster sugar 2 tsp vanilla extract 1/2 tsp baking powder 1/2 tsp bicarbonate of soda pinch of salt
Preheat oven to 160 degrees (fan-forced)
Prepare a loaf pan, with baking paper and set aside.
